Banana & Chocolate Chip Muffins

Ever wondered what to do with those over ripe bananas that just sit in the fruit bowl, nobody will eat them as they are just a bit too brown. Well here's the answer ….          (video demo below)

INGREDIENTS FOR 12 LARGE MUFFINS


300g plain flour

175g castor sugar – or brown if you prefer

15g baking powder

100g melted butter, sunflower oil or maize oil

50g milk

2 large free range eggs

3 well ripened bananas mashed

100g good quality either dark or milk chocolate chips or chunks

 3g bicarbonate of soda

12 bun muffin tray, lined with cases

METHOD

Turn on oven to 190 deg C. Sieve together the flour, sugar and baking powder. Mash the bananas,the riper the better, as this adds more flavour. Lightly beat the egg, add to the melted butter, milk and mashed banana. Add this to the dry ingredients and chocolate, and mix gently, just until all the ingredients are combined, and no flour is visible. Do not beat as this will give you tough muffins !!


Divide equally between 12 muffin cases, remember to grease your tin if you are not using cases, or they will stick, then bake immediately for approx 20-24 minutes , until they are well risen and firm to the touch. Remove from the oven, and leave in the baking tray for 5 minutes or so to firm up, before turning out onto a cooling rack. Eat warm or leave to cool. ENJOY !


These are definitely best eaten with 24-48 hours, but can be stored in an airtight container, for a little longer.

    Great muffin recipe! Made with 2 year old child and the end result was moist and not too sweet! I did only use 2 large bananas though and they did not need 20 mins as were too brown on top! Yummy muffins!

    I made half the amount for six muffins (using oil not butter) and they were fantastic in terms of consistency but maybe a tad on the sweet side. I used milk chocolate chunks but next time will use plain, and a fraction less sugar. Then I think they’ll be perfect :-)

    I fancied whipping up some muffins to use up a couple of bananas. I halved the ingredients as I didn’t want 12. The results were perfection, the best muffins I have made by far. This is a keeper to use with other flavours. Thank you so much

    Followed this recipe and produced fab results! Hubby and work colleagues loved them so am going to bake some more! Smelled lovely when cooking and stayed nice and moist after, not dry. I have a fan oven and the 20 minutes was perfect timing for me. This is the first time I have ever made muffins and I am so pleased with the outcome, thank you for sharing muffin heaven!
